Country Apple Crumb Cake

This coffeecake has a wonderful fragrance of spiced apples
A piece of old fashioned goodness
Cake Batter

3 eggs
1 1/2 cups sugar
1/2 cup brown sugar
1 cup vegetable oil
2 cup flour
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract
1 cup walnuts, chopped
3 large tart apples, peeled, cored and sliced thin

Preheat oven 350 degrees.
In a large mixing bowl, beat eggs, sugar, vanilla and oil on medium speed for 1 minute. In another bowl, stir together flour, cinnamon, baking soda and salt. Beat flour mixture slowly into egg mixture, until well incorporated, the beat an additional minute. Stir in walnuts. In a buttered 13x9x2 baking pan spread 1/2 of the batter, then spread apples evenly over. Spoon remaining batter evenly over apples, spreading to cover (mixture will be thick).
Crumb topping

1/3 cup flour
1/3 cup brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons butter
1/3 cup walnuts, chopped

In a small bowl, mix together flour, brown sugar cinnamon, nutmeg and butter until it forms a fine crumb texture, stir in nuts. Sprinkle evenly over cake batter and bake 55-60 minutes. Cut into squares and serve warm or room temperature.
